Enzymes are proteins that are capable of very specific tasks. They occur in all living organisms and, fortunate for mankind, also work outside living cells. They perform a myriad of different tasks, and for each task there exists another enzyme. The millions of different animals, plants and micro-organisms inhabiting earth provide an unlimited source of potentially useful enzymes. But extracting these enzymes in sufficient quantities for industrial or medicinal use is not always possible or desirable. Genetic engineering offers an elegant solution, supplying us with an unlimited quantity of pure enzymes and using less energy and raw materials then classical production methods.
